Sunny weather is officially here, readers!


If you’re here in Minnesota as well, you know we’ve been waiting for some sunshine. This past weekend was so beautiful outside! Almost everyone I saw was out walking the dogs, biking, or setting up in the park. After a goofy first few months of 2024 in terms of weather, we sure deserve it! It’s time to brush off the patio furniture, clean up the yard a bit, and call some friends for a good outdoor get-together.


Nothing brings friends together after a long winter like a good potluck or party in the garden to celebrate the sunny weather, and we’ve got just the recipe for you! We took our delectable Nuttinosh pistachio butter and paired it with the savory magic of roasted vegetables.


I present to you: Roasted Carrots with Pistachio Butter Dressing.


We used carrots for our roasted veggies in this recipe, but feel free to use your favorite roasted vegetables whether it's carrots, brussel sprouts, asparagus, broccoli, or even artichokes! This recipe is wonderful because it is versatile, and you can switch up your veggies or Nuttinosh spread to create all sorts of delicious flavor combinations.

Let’s break it down! Here’s What You Need For Your Roasted Carrots:

  • Whole carrots.
        • We like to use multicolored carrots from Trader Joe’s because they are the perfect size, and make for a beautiful presentation! (Be mindful of your oven temperature and time, as not all vegetables roast the same - whole carrots take a bit longer  and higher heat than some other veggies.)
  • Nuttinosh Pistachio Butter.
        • It wouldn’t be a Nuttinosh recipe without it! Whether you’ve got the original Pistachio Butter or Sea Salt in your cupboard, any Nuttinosh butter works perfectly for this recipe.
  • Olive Oil.
        • For enhancing the consistency of your dressing, and making it a little more creamy..
  • Lime.
        • Lime juice will give it that kick - we’ve got a lot of mellow, subtle flavors going on, and the addition of lime will take the flavors up a notch without overpowering your vegetables.
  • Salt.
      • As always, for bringing out our wonderful flavors!

    Whether you’re entertaining a whole crowd or just your family, roasted carrots with Pistachio Butter Dressing is the perfect small bite or side dish for a balance of sweet and savory. Better yet, this recipe is very easy and can come together in just over 30 minutes!

    Sharable Roasted Carrots with Pistachio Butter Dressing

    Prep Time: 10 mins

    Cook Time: 30 mins

    Makes approx. six servings.


    Ingredients:

    Instructions:

    1. Preheat your oven to 400-425 degrees F.
    2. Line a baking sheet with parchment paper (or aluminum foil).
    3. Prepare your carrots by washing, peeling, and slicing in half.
    4. Line up your carrots on the baking sheet.
    5. Place carrots in the oven for 25-30 minutes, checking occasionally to ensure even cooking. Pierce one carrot at its thickest point to test if they are tender and fully-cooked!
    6. In a glass container or bowl, combine NuttiNosh spread, lime juice, and salt.
    7. Use an immersion blender to blend the mixture while slowly adding olive oil until you reach your desired consistency.
    8. Drizzle the dressing over your roasted veggies for a delicious and healthy snack or side dish!
