Sugar-Free Pistachio Butter Brownies

I think everybody’s got their own special “guilty pleasure” food. Brownies might typically fall into that category, but not these ones! This recipe omits the use of flour, sugar, and dairy (our traditional elements that make brownies air on the unhealthy side), so you can feel confident that you’re serving up a dessert that doesn’t have to feel like a guilty pleasure!
I’m very excited to share this one: Sugar-Free Pistachio Butter Brownies.
I’m a pretty loud and proud healthy-dessert kind of mom, so I was very excited to put the Nuttinosh twist on a tasty brownie recipe from PickUpLimes. These brownies are so rich, you wouldn’t believe they’re dairy-free AND vegan! Can we get a round of applause for PickUpLimes? And who needs to add sugar anyway when you have plenty of natural sweetness from Medjool dates and a rich dark chocolate? I find that sometimes, dark chocolate can be a pretty overpowering element in some recipes, and can be a little daunting to work with. It has such a strong, deep flavor that needs something to balance it out. The sweetness of the dates, earthiness of the pistachio butter and richness of the dark chocolate all come together to create a trifecta of tastiness!
Pistachios are also a great hack to get in our daily dose of protein, especially in comparison to other nuts like walnuts or cashews. Did you know that just 1 ounce of pistachios is approximately 6 grams of protein? We also choose pistachios and pistachio butter for their healthy fat content, which is great in baking! These healthy fats provide natural oils to our recipe, keeping our brownies moist and delicious.
Our Roasted Pistachio Butter ended up being the perfect companion to the richness of the dark chocolate in these brownies, and gives it a perfect earthy note. We typically use our classic Roasted flavor, but our Pistachio Butter with Sea Salt can be a delicious choice as well - give it a try!

This recipe leans on Nuttinosh Roasted Pistachio Butter for its fudgy texture and roasted flavor — no eggs, dairy, or refined sugar needed.
Ground flaxseed.
- Flaxseed is naturally gluten-free, and provides a nutritious substitute for all-purpose flour in this recipe. Flaxseed is a great plant-based source of fiber and protein!
Your favorite plant-based milk.
- I like to use my homemade Pistachio Milk in this recipe for an extra punch of nuttiness, but you can use soy, almond, oat, or whichever plant-based milk you typically have in the fridge. This recipe is flexible!
Roasted pistachios.
- Pistachio nuts are the perfect addition to add a great nuttiness to our brownies. You can also substitute with other nuts if you prefer! I typically use pistachios because they are a fantastic source of protein when compared to other nuts.
Medjool dates.
- Our dates will serve as a natural sugar! They will give these brownies that chewy, yummy brownie-like texture.
Cocoa powder.
- Our cocoa powder will create the foundation of our rich, chocolatey flavor and help our brownies rise.
Nuttinosh Roasted Pistachio Butter.
- Of course, we’re using Nuttinosh in this recipe to add some of that pistachio deliciousness. It creates a wonderful flavor balance with the richness of the dark chocolate and the sweetness of the dates.
Vanilla extract.
- Vanilla extract is used quite a bit in baking because it adds that little bit of “oomph” and brings out the flavors of our main ingredients. Similarly to using salt, baked goods can taste a little flat without it.
Dairy-free chocolate chips.
- Using dairy-free chips keeps this recipe together for our nondairy and vegan friends out there. I like to use Trader Joe’s Semi Sweet Chocolate Chips - they are a great dairy-free option for this recipe!
Instant coffee granules.
- This step is totally optional! If you like an earthier coffee flavor in your desserts, instant coffee adds a nice complexity to the brownies. If you’re not big into coffee, you can leave it out.

Makes approximately 15 brownies.
Ingredients:
- 1 Tbsp flaxseed, ground
- ½ cup plant-based milk, unsweetened (Link to our Pistachio Milk recipe here.)
- ¼ cup unshelled pistachios, roasted
- ¾ cup Medjool dates, pitted
- ⅓ cup cocoa powder
- ¼ cup Nuttinosh Roasted Pistachio Butter
- 1 tsp pure vanilla extract
- ¼ tsp salt
- ⅓ cup dairy-free dark chocolate chips
- 1 tsp instant coffee granules (optional)
Directions:
- Preheat the oven to 350°F (180°C).
- In a large bowl, combine the ground flaxseed and your milk of choice. Set aside.
- In a food processor, add the roasted pistachios and Medjool dates. Blend until smooth.
- Transfer the pistachio-date mixture to your large bowl.
- Add all the remaining ingredients.
- Mix until well combined.
- Line or oil a mini muffin tin to prepare for your brownie batter.
- Spoon a tablespoon of batter into each well of your muffin tin until each well is ⅔ full.
- Bake on the center rack for 22 - 25 minutes, or until the top is firm and a toothpick comes out clean.
- Allow to cool for a couple of minutes before removing from the tin.
