Plant-Based Pistachio Butter Sandwich
Summertime feels like it’s flying by, readers! But I feel like there are still lots of opportunities to be on-the-go. On a hike, a picnic at Como Park, a beach day at Lake Nokomis, maybe even a weekend road trip up to Duluth! I love the summertime because I love to travel, and spend the days of beautiful weather outdoors with my family.
When we’re plotting some day trip or picnic plans, what we pack to eat becomes essential planning. One great idea is to pack the ingredients to have a “sandwich bar”! This is an excellent way to build-your-own on the go, and everyone can make a sandwich their favorite way - pack a few different proteins, cheeses, vegetables, spreads, and you're ready to roll!
Today, I’m sharing my favorite sandwich, my Plant-Based Pistachio Butter Sandwich. This is my absolute go-to for a quick lunchtime fix. It’s simple but effective! Ample protein to carry me through the afternoon, plant-based with a great vegetable crunch, and totally delicious. It’s also completely versatile! Like with any good sandwich, you can swap up the ingredients for never ending combinations.
While the art of sandwiching can have endless possibilities, there are a few staple notes: a good bread, a good crunch factor, and a good spread. Our Nuttinosh Sea Salt Pistachio Butter makes a fantastic sandwich spread. Nothing’s more devastating than a sandwich that’s too dry, right? Similar to how you would use a sauce or hummus, Nuttinosh can really bring a sandwich to some seriously next level flavor.

Let’s Break It Down! Here’s What You Need For Your Sandwich:
- Our Nuttinosh pistachio butter makes for a great sandwich spread! Every sandwich enthusiast out there knows that the perfect spread makes a perfectly balanced sandwich. We used our classic Roasted flavor, but feel free to try the Sea Salt or Pistachio-Cashew spreads to find your right flavor.
- My favorite bread to use in this recipe is a nice baguette, however any bread with a good crust will work wonderfully. Think sourdough, ciabatta, or even a bagel!
- Provolone is delicious semi-hard cheese that adds a touch of creaminess. It’s the perfect pairing for this sandwich as it balances well with the star of the show, our pistachio butter.
- Beefsteak tomatoes can be some of the best sandwich-ing tomatoes because of their high water content - they are crisp, fresh, and delicious in raw form on salads or sandwiches!
- Of all of our leafy greens, spinach is a goldmine of essential vitamins and minerals. Spinach is my absolute favorite on a sandwich, but you can absolutely try this recipe with lettuce, arugula, or microgreens if you prefer.
- As always, keep your salt and pepper on hand to taste.

Easy Veggie and Pistachio Butter Sandwich by Anosha Singh
Prep Time: 5 mins
Cook Time: 5 mins
Total Time: 10-15 mins
Recipe makes one sandwich.
Ingredients:
- 2 tbsp, NUTTINOSH Roasted or Sea Salt Pistachio Butter
- 2 pieces, your bread of choice
- 1-2 slices, Provolone cheese
- 2-3 slices, tomato
- 1 handful, baby spinach (or greens of choice)
- Balsamic vinegar, to drizzle
- Salt and pepper to taste
Directions:
- Place your two slices of bread in the toaster, and toast to your liking. If you do not use a toaster, you can toast your bread in a pan on the stove on medium-low heat.
- While your bread is toasting, take time to prep your vegetables. Slice your tomato and your spinach on a cutting board. If you prefer block cheese, you can slice your cheese as well!
- Once your toast is ready, apply a generous layer of NUTTINOSH Pistachio Butter (Roasted or Sea Salt, pick your favorite!) .
- Layer on your slice of provolone cheese.
- Layer on your tomatoes.
- Layer on your baby spinach (or other greens of choice).
- While the sandwich is open-faced, drizzle balsamic vinegar onto the sandwich.
- Sprinkle salt and pepper to taste.
- Place your second piece of toasted bread on top of your stacked sandwich.
- Enjoy!
