Ingredients
For the Spinach Pistachio Spread

1 handful fresh spinach

2 tbsp yogurt (regular or plant-based)

Small squeeze of lemon juice

Freshly cracked black pepper, to taste

1 tbsp pistachio butter
For Serving

Warm toasted bread of choice

Sliced hard-boiled eggs

Sprinkle of sumac powder
Instructions

Add the spinach, yogurt, lemon juice, and black pepper to a blender. Blend until smooth.

Add the pistachio butter and blend again until creamy and fully combined.

Spread the mixture onto warm toast.
