Pistachio Spinach Toast with Eggs & Sumac

A simple savory toast packed with greens, protein, and healthy fats — perfect for breakfast, lunch, or a slow weekend brunch.

Ingredients

For the Spinach Pistachio Spread

  • 1 handful fresh spinach

  • 2 tbsp yogurt (regular or plant-based)

  • Small squeeze of lemon juice

  • Freshly cracked black pepper, to taste

  • 1 tbsp pistachio butter

For Serving

  • Warm toasted bread of choice

  • Sliced hard-boiled eggs

  • Sprinkle of sumac powder

Instructions

  1. Add the spinach, yogurt, lemon juice, and black pepper to a blender. Blend until smooth.

  2. Add the pistachio butter and blend again until creamy and fully combined.

  3. Spread the mixture onto warm toast.

  4. Top with sliced hard-boiled eggs and finish with a sprinkle of sumac.

Optional Additions

  • Chili flakes for heat

  • Microgreens or arugula

  • Drizzle of olive oil

  • Flaky sea salt

Serving Idea
