Now, I have to give credit where credit is due: I came across this amazing at-home and plant-based recipe for ice cream bars from PlantYou, and had to try them my way! Ingredients:
- 2 ripened bananas
- ½ cup plain Greek yogurt
- 2 tbsp Nuttinosh Roasted Pistachio Butter
- ¼ cup whole milk
- 1 tsp vanilla extract
- 6 oz semi-sweet chocolate chips
- 1 tbsp coconut oil
- 2 tbsp crushed pistachios
Equipment:
- Silicone ice cream bar molds (I used this mold that is perfect for kid’s size bars!)
Directions:
1. Combine bananas, Greek yogurt, Nuttinosh pistachio butter, milk, and vanilla extract in a blender, and puree until the mixture is smooth.

2. Pour mixture into your ice cream bar molds and place in the freezer for 5 hours, or overnight.
3. Once your ice cream bars are frozen, it’s time to prepare the chocolate: melt your chocolate chips and coconut oil in a microwave-safe bowl, or over the stove until the chocolate is smooth and evenly melted.
4. Next, prepare your ice cream bar topping station: carefully remove your ice cream bars from the mold, drizzle with melted chocolate, and place on a baking tray lined with parchment paper. Sprinkle your dipped bars with crushed pistachios.
5. Once all your ice cream bars have been drizzled in chocolate and sprinkled with pistachios, place the baking tray in the freezer for 1 hour, or until the chocolate is set.
6. Enjoy! You can store your ice cream for up to two months in the freezer.
