When the weather heats up, there’s nothing better than a cold, creamy treat. But so many of our store-bought options are packed with unnecessary added sugar and artificial ingredients. That’s why we’re loving these healthy and homemade Pistachio Ice Cream Bars! I love them and more importantly, the kids love them!

 

Now, I have to give credit where credit is due: I came across this amazing at-home and plant-based recipe for ice cream bars from PlantYou, and had to try them my way! (PlantYou’s recipe is a great option for those of us who prefer a dairy-free alternative for ice cream treats - check out their link here!)

 

Finding healthy snacks that kids actually get excited about can feel like a challenge sometimes. It can be hard to compete with the bright colors and sugary artificial flavors that line the snack aisle at the supermarket! But these Pistachio Ice Cream Bars check all the boxes: they’re sweet, fun to eat, easy to make, with no mystery ingredients.

 

Naturally sweetened with ripe bananas and made ultra-creamy with a swirl of Nuttinosh pistachio butter, these bars are as satisfying as they are good for you. With just a handful of simple ingredients, this is a dessert you’ll be excited to serve up to your family, friends or just keep in the freezer for yourself!

 

These frozen bars are a delicious way to cool off on a warm day. Plus, they’re packed with plant-based nutrients and healthy fats to help fuel all that summertime energy. Whether it’s an after-school snack or a little bit better-for-you dessert, these bars are a great way to give kids something they’ll love while still sticking to the healthy side. Healthy Homemade Pistachio Ice Cream Bars by Anosha Singh


Prep Time: 10 mins

Freeze Time: 5 hrs or overnight

Total Time: 5 hrs 10 mins


Makes approximately 9 ice cream bars.

Ingredients:

  • 2 ripened bananas
  • ½ cup plain Greek yogurt
  • 2 tbsp Nuttinosh Roasted Pistachio Butter
  • ¼ cup whole milk
  • 1 tsp vanilla extract
  • 6 oz semi-sweet chocolate chips
  • 1 tbsp coconut oil
  • 2 tbsp crushed pistachios

Directions:

 

1. Combine bananas, Greek yogurt, Nuttinosh pistachio butter, milk, and vanilla extract in a blender, and puree until the mixture is smooth.

 

2. Pour mixture into your ice cream bar molds and place in the freezer for 5 hours, or overnight.

 

3. Once your ice cream bars are frozen, it’s time to prepare the chocolate: melt your chocolate chips and coconut oil in a microwave-safe bowl, or over the stove until the chocolate is smooth and evenly melted.

 

4. Next, prepare your ice cream bar topping station: carefully remove your ice cream bars from the mold, drizzle with melted chocolate, and place on a baking tray lined with parchment paper. Sprinkle your dipped bars with crushed pistachios.

 

5. Once all your ice cream bars have been drizzled in chocolate and sprinkled with pistachios, place the baking tray in the freezer for 1 hour, or until the chocolate is set.

 

6. Enjoy! You can store your ice cream for up to two months in the freezer.
